Meet Chef Nicolas Intonti

Executive Chef Nick Intonti was born and raised in the Boston area and got his start in several South End kitchens, including Aquitaine and Cinquecento. His family history(Italian-American immigrants who settled in East Boston, and early New England settlers on the Mayflower) is reflected in his food, which weave together European techniques and local New England ingredients. After several years in Boston, Chef Nick relocated to Central Texas where he worked at a fine dining Northern-Italian restaurant sourcing local produce from farmers and purveyors in the Southwest. After a trip to Milan, Nick and several colleagues were struck by the Aperitivo culture and decided to bring a version of this laid-back hospitality to Austin, TX and opened a casual all-day café called Uncle Nicky’s. In 2019, Nick was also honored with a continuing education grant from the Ment’Or BKB Foundation, which supports Team USA at the Bocuse d’Or World Competition. Through this opportunity, Nick worked under Chef Massimo Bottura at Osteria Francescana in Modena, Italy for several months. Chef Nick is excited to bring his vision of Italian cuisine to coastal New England.
